Chocolate Mousse


Chocolate Mousse....wow! yum yum!

1/4 C pitted medjool dates, soaked
1/4 C agave nectar or maple syrup
1/2 tsp vanilla extract
3/4 C mashed avocado (1 1/2 avocado)
1/4 C plus 2 Tbsp cocoa powder
1/4 C water (I had to add a bit more)

Add all ingredients to vita-mix and viola! We added some fresh strawberries and then I decided to get creative and layer the mousse with Vanilla Creme Sauce (see recipe below)




Vanilla Creme Sauce

1 C soaked raw cashews
1/4 C plus 2 Tbsp water
2 Tbsp agave nectar or maple syrup
1 tsp vanilla extract or 1 vanilla bean

Place all ingredients in blender and process on high until smooth. Chill for 30 min before serving.

  1. Hello! Loving this blog. Just a quick question. How long do you soak the dates and cashews? I'm assuming you soak them in water, but is there any magic to the process? (like water tempature or cover and soak overnight?) Thanks!!!

  2. Nuts I normally soak overnight and dates can be soaked 30 minutes to a few hours

  3. I made the chocolate mousse a few weeks ago and got rave comments from my friends who tried some. they loved it!! I actually added some ingredients to the recipe because i wanted to use it up. like frozen bananas and and folded in some whipped egg whites. Thus it turned into a chocolate banana pudding. yum yum..! I will make again soon. The recipe was super easy but fun to serve and eat!
